Chop all the nuts coarsely on a cutting board, combine them in a bowl, and set them aside.
Dry roast the sesame seeds in a pan on a low flame until then color changes slightly. Set them aside to cool down.
Now dry roast all the chopped nuts along with pumpkin seeds until they're crispy and aromatic.
In a separate bowl, take 1.5 cups of soft dates, rinse them in water and drain properly.
Deseed all your dates and blend them in a chopper to create a thick paste.
In a pan, add 1 tbsp of desi ghee/butter and add the date paste you just made.
Cook it for 4-7 minutes on a low flame and then add all your roasted nuts.
Add 1 tsp of Cardammom powder to the mix. Mix it well with a spatula until everything is well combined.
Pour the mixture on a foil or a parchment paper, spread the roasted sesame seeds on top and roll it.
Once it forms a tube like shape, wrap it in the foil and refrigerate for 2 hours (its better to refrigerate it overnight).
Remove the foil and cut into circular slices, your round energy bars are ready to serve!
