Pistachio cookies

These delicious, pistachio-packed, eggless cookies are the easiest cookie recipe you will come across. It is easy to make, simple, and super delicious pistachio-flavored goodness. Do try them whenever you’re craving anything to snack on but need delicious eggless options.

Ingredients:

  1. Soft butter 1/2 cup
  2. Brown sugar/ jaggery powder 1/2 cup
  3. Vanila essence 1 Tsp 
  4. Whole-wheat flour 1 cup 
  5. Baking powder 1 Tsp 
  6. Pistachios 1/4 cup
  7. Milk 2 tbsp ( as much required to make a nice dough)

How-to-Make:

  1. In a bowl, add soft butter 1/2 cup, jaggery or brown sugar, vanilla essence and whisk until it turns into a creamy paste.
  2. Sift your whole wheat (or regular) flour gradually into the mixture and combine gently with a spatula.
  3. Add in your baking powder and mix thoroughly.
  4. Add milk to soften the dry mixture and knead slightly with the help of your hands.
  5. Make it into a dough ball, and let it set for 30 minutes.
  6. Now roll it in a cylindrical shape, cut equal pieces and make them into biscuit-like shape with the help of your hand.
  7. Chop your pistachios and take each cookie, coat it inbpidtavhios and place on a tray with parchment paper that is greased.
  8. Bake in a pre-heated pan or oven for 35-30 minutes. 
  9. Your eggless whole wheat pistachio cookies are ready to enjoy.

Tips to Bake on a Stove:

  1.   If cookie size is big, it will take more time to be baked.
  2.   Pre- heat your pan for 10 minutes before placing the cookies inside.
  3.   After bake, cookie will be soft, they might break. Let them cool for a couple of minutes before you transfer them onto a serving dish or jar.
  4.   When they get cool, they will become crispy.
