Nan Khatai

One simple recipe that carries the traditional essence of an Asian household and transporting us all back to nostalgia could be none other than Nan Khatai. It is an Asian delicacy, enjoyed over chai amongst family members and guests, and really packs that cultural aroma and flavor in its every bite. 

It is easy to make, and requires just the basic ingredients we all have lying around in our pantries. It is a simple cookie that carries a wonderful flavor and trust me when you will bake it, your kitchen will start smelling like heaven (if you are adding cardamom and saffron like I do).

Naan khatai

Ingredients:

  • Powdered Sugar 1/2 cup
  • Ghee or Softened Butter 1/2 cup
  • Flour 3/4 cup
  • Chickpea Flour 2 tbsp
  • Baking Powder 1 tsp
  • Cardammom Powder 1/2 tsp (optional)
  • Saffron (optional, to taste)
  • 1 egg yolk (for egg wash)
  • Nuts to garnish (optional

How-to-Make:

  1. To make this Nan Khatai, in a bowl, whisk together powdered sugar with softened ghee until it forms a smooth paste.
  2. Now add in flour, chickpea flour and baking powder and combine together to form a dough.
  3. Assemble the dough slightly with soft hands (no need to knead it).
  4. Let the dough rest for 10-15 minutes.
  5. Preheat your pan or oven for 15 minutes on a low flame.
  6. Take your baking tray and align it with butter paper or parchment.
  7. Start making medium-sized balls of the dough and align them on your baking tray.
  8. You can add nuts to garnish the nan khatai biscuits on top or leave it plain depending pm your preference.
  9. Whisk an egg yolk and coat them with it with the help of a brush.
  10. Place them in oven/pan and bake for 15-20 minutes.
  11. Your nan khatai is ready to serve.
