Ingredients:
- Fresh lemon zest 2 Tsp
- Fresh lemon juice 1/4 cup
- Eggs large 2
- Powdered sugar 1 cup
- Vanilla essence 1 Tsp
- Oil 1/3 cup
- Milk 1/3 cup
- All purpose flour 1 cup
- Baking powder 1 Tsp
- Baking soda 1/4 Tsp
- Salt 1/4 Tsp
- Yellow food color 1/4 tsp
For Lemon Glaze:
Lemon juice 1/4 cup
Icing sugar 3/4 cup
- Cold milk 1 Tbs
How-to-Make:
- In a small bowl, peel some lemon zest with a grater or a peeler, and set it aside.
- Now take the lemons and squeeze out their juice in a separate bowl, to use later.
- Now that we have everything prepared, start by taking a big bowl, add the powdered sugar and lemon zest and mix them together with a spatula.
- Crack in the eggs and oil and use an electric hand mixer to beat the eggs properly.
- Now sift and pour in the flour, the baking powder, soda, and salt.
